Culinary geography: Moneglia appetizer

Moneglia appetizer:

It is prepared by frying the clean fish which will then be covered with vinegar, onion slices, lemon and sage, leaving it to marinate for at least an hour before serving


Ingredients

  • Fish 1⁄2 kg

  • Flour 100 g

  • Vinegar 1 glass

  • Oil

  • Garlic 2 cloves

  • Lemon 1

  • Spring onion 1

  • Sage twig 1


Preparation

  1. Flour and fry, then cover the fried fish with vinegar (i.e. marinate) adding garlic cloves, onion slices, lemon slices and sage tops.

  2. When the fish is well marinated (at least an hour), present it with a serving dish by pouring the liquid and the ingredients used for the marinade. To serve.
