W : Torta al testo is a focaccia made with white flour, salt, caster sugar, sachet of yeast, olive oil and water. This “ciaccia” can be stuffed with vegetables, sliced prosciutto and cheeses.

C : Can you recommend a wine to pair with this dish?

W : Certainly sir. With the torta al testo you can combine many wines, it mainly depends on the ingredients used for the filling, for example red wines such as the red Torgiano Riserva goes very well with sausages, cheeses ... because it has a persistent, dry flavor, but at the same time delicate. While white wines, like Orvieto DOC go very well with vegetables for its dry, delicate and pleasant flavor.
